Fusion dining at the Parador in Alcalá de Henarés

On Friday 14th March, the Student Residence at the Parador in Alcalá de Henarés hosted an exclusive culinary experience. In homage to El Greco, on the 400th anniversary of his death, a select menu of exquisite fare was served at the Parador created by the five most emblematic restaurants in Castilla-La Mancha. The evening of fine dining was paired with the very best vintages – 1999 to 2011 – from one of the most representative La Mancha bodegas, El Vínculo; a selection of classic wines for a very special occasion.

 

EL GRECO TASTING MENU: “Gacha” creamy croquettes, chorizo and Basque chilli pepper “regañas” (flatbread); La Mancha “Mojete” tomato-based soup, black olives and sardine salad; saltine crackers together with wild asparagus and black pudding stew, honey, peppermint and “line-caught” cuttlefish; 1-lb loaf of bread with cod, smoked cod with olive oil, tomato and boletus, rye bread. Marinated venison loin stakes in fermented pineapple juice, with pickled onions and sorrel leaves. “Torta de aceite” (flatbread from Seville), cheese ice-cream and honey jelly; green apple slushee-style “granizado”. Tea and coffee with artisanal marzipan from Toledo.
